Wheat Bran Mixture

In a big bowl, mix

  • 3 cups all-bran cereal
  • 1 cup boiling water

Milk Mixture

Add to the large bowl,

  • ½ cup unsweetened apple sauce (I use Kirkland)
  • ½ cup brown sugar 
  • 2 eggs
  • 2 cups non-fat Greek yogurt (I use Kirkland)
  • ½ cup molasses, unsulphered

Flour mixture

In a separate bowl, mix

  • 2-1/2 cup flour, spooned in
  • 1 TB baking soda
  • 1/2 tsp cinnamon (optional)
  • ½ TB baking powder
  • ½ tsp ginger (optional)
  • ¼ tsp salt
  • 1 cup Walnuts chopped 
  • 1 cup plumped raisins (plump by soaking in water)

Steps

  1. Gradually add the dry ingredients to the wet, combining gently.
  2. Fill muffin tins 2/3 way using ice-cream scoop. 
  3. Bake in pre-heated oven 375-degrees (convection oven) for 15-20 minutes.  
  4. Freeze and heat at 30-seconds in microwave. 

Notes:

  • 128 calories per muffin but it is not always about the calories
  • This recipe replaced applesauce and yogurt for oil and buttermilk
  • Although the original recipe had fewer calories 112 (buttermilk) 114 (milk), replacing applesauce with oil and yogurt with buttermilk or milk, increases fat from 4% to 6%, decreases dietary fiber from 11% to 2%, and decreases iron from 17% to 4%. It appears that the current recipe has a higher sodium content, 9% versus 6%. This may be brand-specific for the yogurt or applesauce. The applesauce is 1% sodium while the yogurt is 3%. I did not check further, yet.
