I made some English muffins early during the COVID shelter-in-place period. Having a lot of sourdough discard this week, I baked bread, muffins and plan to try sourdough crumpets. I found a recipe that was perfect for the muffins. I rolled the dough and cut with a circular cookie cutter. I cooked in an iron skillet on top of the stove on low heat as recommended. I had not used a lid before. It was recommended and appeared to work well. The recipe I found online was posted in the Little Spoon Farm website, https://littlespoonfarm.com/sourdough-english-muffins-recipe/. I cannot re-post the recipe here until I request permission. I recommend going to the original site as she posted great images. I used my breadmaker on homemade (dough) cycle. I popped the extra muffins in the freezer to pull when desired.
